Bukayo is a Filipino sweet delicacy made from strips of coconut meat and sugar.

Bukayo may be spelled as bocayo, bucayo, bucaio, bokayo depending on the place. It is dried-coconut candy. Its color is light to dark brown and its chewiness can range from soft to hard enough to give your jaws a tough workout.

Bocarillo is a counterpart of the well known “bukayo”, a very sticky and chewy sweets made from strips of mature coconuts and usually brown in color. Usually it is round shaped and sometimes flat circular shaped. . It is made from strips of young coconut meat instead of mature coconuts.

The bocarillo is made up of coconut strips, white sugar, water, food coloring, evaporated milk and some secret ingredients. The basic steps in making a bocarillo are as follows: First is to combine sugar and coconut strips in a saucepan; then cook stirring constantly over low heat until almost dry; after, stir in evaporated milk and slightly beaten eggs; add in other ingredients you wish to add  coat the coconut meat with the sugar and cook for 1-2 minutes only; and set aside to air dry. Once dried, the bocarillo is ready to eat.
