Otap (sometimes spelled utap) is an oval-shaped puff pastry cookie from the Philippines, especially common in Cebu where it originated. It usually consists of a combination of flourshorteningcoconut, and sugar. Its distinctive sweetness which is emphasized with its burnt flavor is a perfect pair for hot chocolate and coffee. The slightly crunchy texture melts easily in the mouth living a sweet lingering taste. In order to achieve the texture of the pastry, it must undergo a eleven-stage baking process. The crumpled look of the otap is what makes it very fragile and easily to break into bits of pieces when you bite it.
